presentation of the specialities of SW France would be complete without an
exposition of the glorious gastronomic delights of the area: the wonderfully
succulent confits, the extravagant foie gras, the delicate
piquancy of dishes flavoured with the peppers from Espelette.
These great traditional dishes can be found throughout the South West . For us at TREASURES of the SOUTH WEST the problem was to find a producer that creates these delightful dishes to the high standards demanded by modern legislation but at the same time remains loyal to the recipes handed down from generation to generation. Not easy!
So we were doubly delighted to find Jean Lafargue, a maître artisan conserveur salaisonnier who has built up a reputation justly noted in numerous guides. Despite - or perhaps because of - being a relatively small producer - he has won a number of international medals which bear testament to the care and savoir-faire that he and his staff bring to the production of the great gastronomic delights of the South West of France.
We have also found for you a supplier of the famous piments d'Espellette - the delicate and spicy red pepper of Espellette, which adds a delicate piquancy to dishes - and the renowned Pyrénéan cheese. Details will be appearing shortly.
