This bastide town was founded in 1266 on the top of a long and narrow hill by a Cistercian abbey, now disappeared. The road today still goes below the old medieval wooden hall.
Today Gimont is an important centre of the foie gras industry.
Characteristic example of southern Gothic style, the church was built in the 14th century, though the clock tower dates from a later century. Fine tryptych to be seen inside.
